Pudina Naan with Chicken Adraki Kabab

A succulent chicken pieces dunked in ginger based marinade is grilled to perfection. Chicken Adraki Kabab with pudina naan makes an epic combo at with family for barbecue delight.

Preparation time: Overnight for Chicken and 2 hours 15 minutes for the Naan
Cook time: 30 to 40 minutes

Ingredients for Chicken Adraki Kabab:

  • 500g, chicken breast or thigh boneless cubes
  • 1 & ½ tbsp, ginger paste
  • ½ cup, hung curd
  • 2 tbsp, cream
  • ½ tsp, black pepper powder
  • 1 tsp, red chili powder
  • ½ tsp, cumin powder
  • Salt to taste
  • 2 tbsp, refined oil
  • Butter for basting
  • A small pinch of edible food color (Optional)

Ingredients for Pudina Naan

  • 250g, whole wheat flour
  • ¼ tsp, baking soda
  • 1 tsp baking powder
  • 1 tsp, sugar
  • 3 tbsp, yoghurt
  • 1 tbsp, oil
  • ¼ cup of warm milk
  • ¼ cup of fresh mint leaves, very finely chopped
  • Black sesame seeds as required
  • Butter as required
  • Salt to taste

Method For Chicken Adraki Kabab:

01. In a large bowl, combine together all the ingredients well except butter.

02. Cover and allow it to marinate overnight under refrigeration.

03. If in a crunch of time, marinate it atleast 2 hour prior.

04. Preheat the oven at 200 degrees centigrade.

05. Either skewer the chicken pieces or spread it on a baking tray. Grill it for 20 to 25 minutes or until they are done.

06. Alternatively, these can be barbequed in tandoor on skewers.

07. Chicken Adraki Kabab is ready to be served.

Method For Pudina Naan:

01. In a bowl, add flour, mint leaves, salt, baking powder and baking soda. Mix them well.

02. Add yoghurt and oil. Mix well.

03. Add the warm milk and start kneading the dough. Give good knead for 5 to 7 minutes.

04. If you feel the dough is too tight, do add few tablespoons of warm milk but do not add too much at a time.

05. Knead it into a soft and smooth dough. Cover with a damp cloth and allow it to rest for 2 hours at a warm place.

07. Take one ball and cover the rest of the balls with the damp cloth.

08. Grease the ball with oil and roll it into an oval shape with the thickness of 6 to 7 mm.

09. Sprinkle the sesame seeds on the top of it and press gently such that the seeds stick well to the rolled dough.

10. Now carefully, lift the rolled out naan and apply water uniformly on the lower side of the naan.
Gently, place the naan on a very hot griddle with the watered side of the naan sticking to the griddle.

11. Allow it to cook for 30 seconds.

12. Now, turn the griddle upside down on the open flame to cook the upper side of the naan.

13. Once done, carefully take it off the griddle and apply butter on it. Repeat the same for all the balls.

14. Pudina naan is ready to be served with Chicken Adraki Kababs.

15. Serve Pudina naan with Chicken Adraki kababs along with sliced onions and chutney on the side.
